Zucchini Spirals with Cilantro Lime Chicken

1 package of joyloop zucchini spirals

2 tablespoons of olive oil

1 teaspoon of fresh garlic

3/4 lbs of boneless, skinless chicken, chopped into cubes

1 teaspoon each of garlic powder, chili powder, and cumin

1 jalapeno, deseeded and diced

1/2 cup of chopped cilantro

Juice of 1 lime

Salt and pepper, to taste


1. Add 1 tablespoon of olive oil to large skillet and heat to medium. Add the diced chicken breast and let cook for 2-3 minutes. Add in fresh garlic, jalapeño, garlic powder, chili powder, and cumin. Cook for an additional 3-5 minutes until the chicken is lightly browned & cooked through. 

2. Add in zucchini spirals and cook for another 2-3 minutes - stirring often until spirals are cooked to your liking. Sprinkle in the chopped cilantro & add in the lime juice. Remove from the heat and season with salt & pepper.

Jalapeño Cheese Cauliflower Muffins

Servings: 12 Muffins



1 package of joyloop cauliflower rice

2 tablespoons of minced jalapeno

2 eggs, beaten

2 tablespoons of melted butter or ghee

1/3 cup of grated parmesan cheese

1 cup of grated mozzarella cheese

1 cup of grated cheddar cheese

1/2 teaspoon of garlic powder

1/2 teaspoon of onion flakes

1/2 teaspoon of baking powder

1/4 cup of coconut flour

Salt and pepper, to taste


1. Combine the cauliflower rice, jalapeno, eggs, and melted butter in a medium bowl. Add the grated cheeses and mix well. Stir in the onion flakes, salt, pepper, garlic powder, baking powder, and coconut flour until thoroughly combined.

2. Divide the mixture evenly between 12 greased muffin cups. Bake in preheated 375 degree (F) oven for 30 minutes or until golden brown. Remove and serve warm or cold.

Creamy Carrot Spiral Slaw with Purple Cabbage and Currants

Prep time: 15 Minutes

Serves: 2-3



1 bag of joyloop carrot spirals

1/4 cup of red onion, finely chopped

1 cup of purple cabbage, julienned

1/4 cup of dried currants (raisins also work)

juice of 1/2 lime

1 teaspoon of honey (maple syrup also works)

1 teaspoon of apple cider vinegar 

1/8 cup dry roasted almonds, chopped

2 scallions, diced



1/3 cup of plain greek yogurt

1/2 tablespoon of dijon mustard

1/2 teaspoon of garlic powder

salt and pepper, to taste

juice of 1/2 lime


1. Place all of the ingredients for the dressing in a bowl and whisk together. Set aside.

2. In a separate large bowl, add all the other ingredients. Add dressing and mix until well coated.

Note: This actually gets better with time so make ahead and store in the refrigerator at least 2 hours (all the way up to 24 hours) before eating.
