Zucchini Spiral Breakfast Bowl

This zucchini spiral bowl filled with avocado, sweet potatoes and eggs is perfect for breakfast or brunch or lunch!

Serves: 2 people

INGREDIENTS:

1 bag of joyloop zucchini spirals

1 avocado, peeled and pitted

3 teaspoons of olive oil

1 tablespoon water

1 teaspoon of lime

1 sweet potato

2 eggs

Salt and pepper, to taste

FOR GARNISH (OPTIONAL):

2 green onions, chopped

  1. Cut sweet potatoes into small cubes and heat 1 teaspoon of olive oil in a pan on medium heat and cook potatoes (5-7 minutes), stirring occasionally.

  2. Once the potatoes are down to their last couple of minutes, cook two eggs to your desired doneness (2-3 minutes for sunny side up).

  3. While the eggs and potatoes finish, make the avocado puree. Add avocado, lime, remaining olive oil, water, salt & pepper into a blender or food processor and pulse.

  4. Pour avocado puree on top of raw zucchini spirals and stir; add potatoes and sunny side up egg on top.

  5. Garnish with green onion, salt and pepper.
