Carrot & Zucchini Spiral Pad Thai

Total time: 20 minutes 

Serves: 3-4

 

INGREDIENTS

1 pack of joyloop zucchini spirals 

1 pack of joyloop carrot spirals 

1 tablespoon of tamarind sauce

1 tablespoon of low sodium soy sauce or tamari or coconut aminos

1 tablespoon of lime juice

1 tablespoon of sambal/chili paste

1 teaspoon of grated ginger

1 tablespoon of honey

1 tablespoon of garlic 

 

FOR GARNISH

Chopped basil

Bean sprouts 

Crushed peanuts 

 

1. Combine all of the ingredients for the sauce into a bowl and whisk together.  Add sauce to a large pan or wok and simmer for 3-5 minutes until sauce reduces slightly. 

 

2. Add zucchini and carrot spirals to pan and combine with sauce. Heat together for 3-5 minutes or until spirals are cooked to your liking. 

 

3. Garnish with chopped basil, bean sprouts, and peanuts.
