Zucchini Spirals with Shrimp and Coconut Avocado Cream Sauce

Cook time: 5 minutes 

Total time: 20 minutes

1 package of zucchini spirals 

10 oz of peeled shrimp

1 avocado

1 teaspoon of lemon zest 

1/8 cup of lemon juice 

3 tablespoon of coconut milk

1 teaspoon of honey

1 teaspoon of Sriracha (optional)

Salt and pepper, to taste



1/4 cup of chopped cashews

1/4 cup of chopped cilantro 


1. Combine all the sauce ingredients in a food processor and blend until smooth. 

2. Add 1 teaspoon of olive oil to large pan and bring to medium heat. Cook shrimp until golden (2-3 minutes/side).

3. Add in Zucchini Spirals and sauce. Let everything cook together for 3-5 minutes till warmed through. 

4. Top with chopped peanuts/cilantro.
